Potato Soup Recipe

Want to make awesome looking soup like this!?

It's really simple to make and here is the real kicker...it's actually much healthier than regular potato soup! I used a combination of recipes to make mine, but this was the closest I could find.  

Ingredients: 
  • 3/4 cup (1 medium onion), chopped 
  • 4 1/2 cups of potatoes, peeled and diced 
  • 1 tablespoon of margarine 
  • 3 tablespoons of flour 
  • 1 quart of whole or Vitamin D milk 

Directions: 
  1. Place potatoes and onions in a large pot. Cover with water and bring to boil. 
  2. Simmer potatoes and onions until soft, about 10 minutes, then drain.
  3. Mel margarine in saucepan. Once melted add milk and then stir in flour. Continue to stir until smooth. Heat to thicken. 
  4. Combine potatoes, onions and milk mixture into large pot. 
  5. Salt and Pepper to taste and heat to serving temperature. 
Makes approximately 8 (1 cup) servings.
