Want to make awesome looking soup like this!?
{the picture does not do it justice}
It's really simple to make and here is the real kicker...it's actually much healthier than regular potato soup! I used a combination of recipes to make mine, but this was the closest I could find.
Ingredients:
- 3/4 cup (1 medium onion), chopped
- 4 1/2 cups of potatoes, peeled and diced
- 1 tablespoon of margarine
- 3 tablespoons of flour
- 1 quart of whole or Vitamin D milk
Directions:
- Place potatoes and onions in a large pot. Cover with water and bring to boil.
- Simmer potatoes and onions until soft, about 10 minutes, then drain.
- Mel margarine in saucepan. Once melted add milk and then stir in flour. Continue to stir until smooth. Heat to thicken.
- Combine potatoes, onions and milk mixture into large pot.
- Salt and Pepper to taste and heat to serving temperature.
Makes approximately 8 (1 cup) servings.
